How to cook duck breasts
- Score: pat the skin dry, score it in a criss-cross through the fat but not into the meat, and season with salt.
- Render: lay skin-side down in a cold, dry pan and set over a medium heat for 8 to 10 minutes, pouring off the fat as it builds up.
- Seal and finish: turn over for 1 to 2 minutes, then move to an oven at 200°C (180°C fan). The Food Standards Agency advises cooking duck until it is steaming hot throughout, with no pink meat and clear juices, which takes around 10 to 15 minutes.
- Rest: rest skin-side up for 5 minutes, then slice.
Delivery: Packed and delivered chilled in an insulated box, nationwide across the UK.
Duck Breasts FAQs
How do you get crispy skin on duck breast?
Score the skin, start it in a cold pan and render the fat slowly over a medium heat before turning. Pour off the fat as you go.
What sauce goes with duck breast?
Fruit cuts through the richness: cherry, orange, plum or blackberry sauces are classic. A red wine reduction also works well.
Should I buy one large duck breast or a twin pack?
Our 8oz Duck Breast is a single, generous portion. This twin pack gives two slightly smaller breasts, ideal for cooking for two.
Storage: Keep refrigerated and follow the storage instructions on the product packaging.
