How to cook an 8oz duck breast
- Score: pat the skin dry and score it in a criss-cross, cutting through the fat but not into the meat. Season both sides with salt.
- Render: lay it skin-side down in a cold, dry pan and set it over a medium heat. Leave it for 8 to 10 minutes as the fat melts out and the skin turns deep golden and crisp. Pour off the fat as it builds up.
- Seal: turn it over and give the meat side 1 to 2 minutes.
- Finish: move the pan to an oven at 200°C (180°C fan) and cook until done to your liking. The Food Standards Agency advises cooking duck until it's steaming hot throughout, with no pink meat and clear juices, which takes around 10 to 15 minutes.
- Rest: leave it skin-side up for 5 minutes, then slice across the grain.
Save the rendered fat in a jar in the fridge. It makes some of the best roast potatoes you'll ever cook.
Crispy skin. Tender centre. Big flavour.
Delivery: Packed and delivered chilled in an insulated box, nationwide across the UK.
Duck breast FAQs
Why start duck breast in a cold pan?
Starting cold lets the thick layer of fat under the skin melt slowly before the skin colours. Put it into a hot pan and the skin burns while the fat underneath stays soft and chewy.
How long does duck breast take to cook?
Around 20 to 25 minutes in total: 8 to 10 minutes rendering the skin in the pan, a minute or two on the meat side, then 10 to 15 minutes in the oven, plus 5 minutes resting.
What goes well with duck breast?
Fruit cuts through the richness, so cherry, orange or plum sauces are classic. Dauphinoise or mash, green beans, roasted roots and braised red cabbage all work well.
How many does an 8oz duck breast serve?
One, as a generous main course. Sliced thinly over a salad or noodles, it will stretch to two.
